Apricots

Postby Ratatouille » June 4th, 2019, 8:51 am

The apricot season is upon us and I mentioned one of my favourite apricot desserts elsewhere. Here is the recipe:

Apricot and nougat clafoutis.
%00g apricots - wash dry and halve, removing stones
50g nougat - cut into small pieces
50g sugar +little for the dish
30g flour
3 eggs
25g butter + a little for the dish
50cl whole milk

Heat oven to 190C , gas 5
Butter and sugar a suitable ovenproof dish.
Beat the eggs and work in the sugar and flour
Melt the butter in the milk
Mix milk with the eggs, flour and sugar until smooth.
Place the apricots cut side down in the dish in a single layer add the nougat pieces then pour over the egg mixture
Cook for about 30 mins or until just set. Servw warm of cold.

Really easy dessert with not quite ripe enough to eat raw apricots. Cut in half and lay in a single layer cut side up in a shallow dish. Add a ratatfia biscuit in the hollow pour on a little sweet wine, water and honey or lemonade and bake until soft. Yummy with a dollop of ice cream, yogurt , mascarpone or thick cream

Both recipes very tempting, though I'll start with the first one as I have some Iranian nougat. Will have to hide it from Monsieur till Saturday - my local market day. I avoid buying fruit and veg in supermatkets if poss.

We used to make that at school. Mine never made it home as my friends who boarded devoured it
