I have some filo lurking in the fridge and some leaves and herbs in the garden so might have a go when the fridge is next bare....

I make mine much like her final version though mine is usually round, I think her rectangle might be easier!

My recipe exactly, bar the eggs - OH can't stand them. I make mine in a rectangle too.

A friend of mine who is Greek (from Cyprus) makes his spanakopita with sheets of puff pastry instead of filo. Can't be bothered with fiddling with filo these days!! His mother does the same, I believe, so I figured if it's good enough for them then it's good enough for me - so that's what I do now

I have only ever eaten Spanakopita bought from shops or made by others and have often found the flavour/seasoning lacking. This recipe looks as though there is enough of everything to be flavoursome, I might give it a try.

I would have to fiddle with Filo to be authentic but like the puff pastry tip! The last couple of times I have bought filo it has been much easier to handle than it used to be.

I use both filo and sheets of ready made puff pastry - depends what I have at the time. If I'm honest, puff is just as good with a lot less faff.
