What's yours?

I'm too concerned about unnecessary calories to add frostings or icings to cakes very often, especially in the quantities they are often used on cupcakes. If anything looks as if it needs something it's usually a sparse drizzle of glacé icing.

Occasionally frostings and fillings are an integral part of a cake - then I like cream cheese frostings. I'm not fond of buttercream, although the Hummingbird Bakery version is lighter than the traditional one, especially if used sparingly.

A ‘drizzle’ or a thin glacé icing is quite enough sweetness for us on the rare occasion that I make a cake with a topping.

I can’t help wondering ... are we helping with research for some sort of project, do you ask the same questions on other forums and collate the responses, or is this just what we would call ‘idle curiosity’ ? ... not meaning anything pejorative by that by the way ... I’m a great one for ‘idle curiosity’ myself :D

none - i'd rather the cake was good enough without it.
i always scrape the thick lump of 'goo' from the top of cupcakes (whatever happened to fairy cakes?) and the hard icing on many celebration cakes gets the marzipan removed then left on the side.

i had thought along similar lines. either that or a way to try to improve the poster's english. there are a number of languages that don't use the definite and/or indefinite article, such as japanese, which seems to show up in posts.

Konditor and Cook make a variant on buttercream using cream cheese, which, with lemon, they use to top and fill my favourite cake that they make - their so-called lemon chiffon. I have replicated. It is delicious, although I wouldn't call it icing?

I do dislike royal icing (? the rock hard stuff) traditionally put on Christmas cake, and loath that nasty roll out stuff they sometimes use on bought cakes - especially the ones that are decorated to look like unicorns, footballs (!) etc. - the sort of thing Jane Asher may have started a fashion for.

I like old fashioned types of icing, the types which were on cakes in my earlier years. Usually a water icing (sometimes made with lemon juice) , butter icing to complement the flavour of the cake and royal icing depending on the cake. All spread onto the cake or cakes quite thinly. I am not keen on the trend for icing on cupcakes over an inch thick or fondant icing (which is good for rolling and modelling but usually tastes much too sweet and horrible).

Some cream cheese toppings are nice and marscapone based ones and of course there are things like chocolate ganache - which should not be too thick.

actually, you've reminded me - the coating on a 'bruce bogtrotter' cake is worth eating on it's own. (i don't count the drizzle on a lemon drizzle cake as icing - it's part of the cake).

i put scans of the recipe on here a while back. it is an extremely good cake - it may even come ahead of lemon drizzle in my list of best cakes.

Seems that everyone has their own version! The scanned one is from the Rohal Dhal book though so looks a good one. The one from delicious mag contains ground almonds which I don't much like in cake. Too claggy.

they certainly are from the roald dhal cookbook. i scanned the pages myself. there are some good recipes in the book to make with/amuse children.

the first time i made the cake i though that the proportions were wrong - not enough flour - so i put a bit more in - it worked fine. the second time, i thought i'd follow the recipe as it was written. it worked fine - but more so - really rich, moist and more-ish. it also improves over a day or so - if there's any left.

oops I forgot post my favorite icing!
I usually go with and old fashion boiled dark chocolate icing,boiled milk chocolate icing or white chocolate icing.
especially if i am making a thin layer cakes with 8-12 layers. Unlike butter cream boiled icing are harder and not fluffy.

chocolate glaze icings also work great on smaller cakes.
