Baking Powder - or not?

When making a basic Victoria sponge type of cake I use SR flour but have never used baking powder.

I have noticed that older recipes I have don't contain it but more modern ones do, usually between 1 and 2 teaspoons for 175g flour.

Do you use it? If you used not to, have you noticed a difference in the result? I am always wary of introducing a nasty baking powder taste.

and I’m happy with a well-risen light result.
I know what you mean but I’ve not noticed that BP taste.

I sometimes add a little extra if a cake is made using the all-in-one method, but I'm not sure it's necessary. It's supposed to compensate for not beating the butter and sugar separately, but an efficient electric beater easily overcomes that.

It's no good asking me about the taste because I've never noticed the 'baking powder' taste in anything.

I add a wee bit of BP. Like Suelle I've never consciously noticed the baking powder taste.

That makes sense Suelle. I don't think people used the all in one method so much some years ago. I will give it a try.

The 'baking powder taste' is a horrible kind of effect which leaves one's mouth and tongue slightly dry, similar to that sometimes found in shop bought scones.

i definitely notice it. a 'spiky' taste on the tongue along with the astringency.
i hate the taste of aspartame, too.

I loathe the baking powder / bicarbonate flavour, caused by the bicarbonate turning to washing soda

Very noticeable in some of those muffin recipes made by combining a wet and a dry mix, and other recipes using that method. And some scones.

I notice it when used in larger amounts ... but not when
used in amounts given in Mary B’s recipes.

I wonder when an acceptable amount becomes too much? I was a bit surprised at MB's 2 teaspoonfuls but then realised she uses a higher ratio of flour and other ingredients to many recipes. I am going to try baking powder in my coffee & walnut this weekend.
