Another sourdough, another experiment!

Came across an idea for overnight sourdough.

With photos!

Refreshed starter with rye flour about 7.45am. 3pm made dough, kneaded, into oiled bowl by 3.30pm. Knocked back and into fridge 7.30pm.

Next morning, 6.30 out of fridge.

7.20am, tipped out onto hot tray, into oven 250C, out at 8am.

So grateful for the tip about using muslin, works a treat. :D

Great looking bread again d pc!
I have done one batch using your timings, and it worked beautifully....thanks for that.
Back to doing no knead just now, lots of visitors, and apart from bread for toast etc, I get lots of requests for soft rolls, and I find ‘ordinary’ bread mix, best and quickest for that.

admittedly not today but I made a vegan lemon cake - curiously so did WW on the same day last Friday! - which was a great success. Here's the recipe: https://www.bbcgoodfood.com/user/461479 ... lemon-cake Apologies if you already saw my thread on sunflower v veg oil which was about this cake, but I thought it would be worth mentioning on this baking thread as it was a new recipe and one I will definitely do again, even when there are no vegans to eat it!
I did cut down on the sugar by 25 g and added a bit of extra lemon zest as my lemon was quite small.

I am trying to replicate as I write. I am using T55 French flour...have only used this for baguettes so am keen to see the result.

Just cut my loaf for breakfast. As you can see it has quite an open texture, which is fine. It has made super tasty toast!
BTW, my tart did not taste as good as it looked...nice pastry and fruit, but I found the filling tasted rather’eggy’. I used a Mary B recipe, and I did think that 4 eggs were a bit much, but I usually follow a recipe first time, then go ‘off piste’ after that.
This is a great board isn’t it...I have learned so much over the years.

Forgot to say, yes my mix was a little wetter than usual. I got my flour from ALDI, it’s Mathews Cotswold Flour. They had a few different varieties, will try some of the others I think.m

It does look rather good doesn't it ... :hungry: we've got some coleslaw that I made the other day, lots of lettuce and radishes in the garden, and some new potatoes I'll cook and serve with a small knob of butter and some chopped chives :D

It was rather good, if I say so myself :oops: I always struggle with the eggs/cream ratio when I'm not following a recipe ... this time I found an American site which recommended 1 large egg : half a cup of single cream .... then I lowered the temperature to around 160C fan and checked after 10 mins and again after 20 mins ... that turned out to be just right ... it was a 20cm flan tin and used 3 eggs and one and a half cups of cream ... the mix was a little bit too much for the tin size, but not a lot too much.

I have a good friend coming this afternoon for the weekend, and I’ve gone retro with a Victoria sponge, but I may put fresh cream and strawberries in it rather than jam, and have it for dessert...depends what time she arrives. I’ve also made traditional sweet scones and also cheese and marmite scones.
For bread, I’ve made a white bloomer, and a whole meal with walnuts and dried cranberries, which is good for toast or with cheese.

What a lucky friend! A childhood friend lived in a large house with a beautiful productive garden. There were wonderful soft fruits in the summer. Once a year there would be a fabulous sponge sandwich filled with sweet cream and macerated strawberries and decorated with more cream and strawberry halves. It was served for afternoon tea with cake forks. I don't think it needs saving for dessert ;). All my adult life I have made one similar cake during the summer as a nod to those days!

I made some Maid's of Honour from Ian in France's recipe for Cook Book Club - they worked well, but I forgot to slacken the mixture with cream, however they were very large egg yolks and it wasn't required, Someone did comment that you really couldn't taste the quince jelly I used, although I know it's quite strongly flavoured, but a couple bubbled up around the edge, so I think I'd used as much as I safely could.. I have adopted the US habit of putting the filling in with a portion scoop, so much easier! I made 24, double amount of frangipane (could have squeezed a few more out of it) and double pastry, of which I used 2/3 so 1/3. about right for my small tart dish, In the freezer

By the end of today, I will have baked an apricot and raspberry 'clafoutis' (is it the ingredients that make it a clafoutis or the method ?) and a lamb hot pot from JO's Quick and Easy 5 series on Ch 4 … I was watching it this morning and was so pleased that I had ALL 5 ingredients (lamb fillets, red onions, mint sauce, potatoes and umami paste) :tu:
