Basically it was this recipe but with 2 tsp mustard seed, 1 tsp coriander seed, ! tsp pepper corns, 1 tsp chili flakes and a star anise in muslin added at the beginning.

I´ve got a recipe ... I´ll try to dig it out tomorrow because we have workers in the house, removing carpets and polishing a granite floor...AARRGGh!
